Everyone in my family has their own favorite. I end up making them all.


Here a couple easy ones:


Cranberry Sauce



  • 1 pkg. fresh cranberries

  • 1 c. sugar

  • 3/4 c. organge juice

  • 1/4 c. water


Rinse cranberries, discard any bad ones. Combine all ingredients in a medium sauce pan and heat over medium heat until the cranberries start to burst. Reduce heat and simmer, sauce will thicken on it's own, approx. 10 to 15 minutes. May be served at room temp. or done ahead of time and refrigerated. This is great with the turkey.


 


This used to be on the cream cheese box. I haven't seen it for a long time. Whenever my family gets together someone makes this. It's a favorite.


Cheesecake Dessert



  • 1  8 oz pkg cream cheese

  • 1 can sweetened condensed milk

  • 1/3 c. lemon juice

  • 1 tsp. vanilla

  • graham cracker crust

  • 1 can cherry pie filling


Soften cream cheese (beat until creamy and lump free), stir in milk and beat until smooth, add lemon juice and vanilla, beat until smooth and creamy, pour into prepared crust. Refrigerate until set, at least 3 hours. Top with pie filling, cover and refrigerate.

I make a winter squash casserole. You can use acorn or any other orange, winter squash. I cut the squash in half and bake it with a little water on the bottom of the roasting pan. Cover with foil and bake at 425 until fork tender (30-45 minutes for larger squash).


Scrape the meat from the baked squash and add it to a buttered casserole dish. I have a potato masher with holes and I use it to mash the squash until it is smooth. Season with butter and salt and pepper; add a pinch of nutmeg for a little kick. There are other ways to make the dish: Savory: add minced, fresh sage and top with grated parmesan. Sweet: Add 1/2-1 teaspoon of cinnamon and 2 tablespoons of brown sugar. Very sweet: Add 2 tablespoons of maple syrup. For the sweet variations, you can top the squash with toasted pecans.


Before serving, bake the casserole at 350 degrees until the squash is heated thoroughly. This is a good candidate to make ahead of time. I have made it three days before Thanksgiving and stored the covered casserole in the fridge.

Cranberry sauce.  I LOOOOOVE cranberry sauce, and I could eat a whole can of it if I wanted to.  Also, any kind of pie, especially apple, pumpkin, or sweet potato pie.
